Location: Castle Mungret, Mungret, Limerick, V94H729 and other locations when necessary
Salary: 34k p.a.
Working hours: 39hrs/week
Responsibilities: To ensure that all stocks are kept under optimum conditions.
wearing full uniform & name badge at all times as instructed by our employee handbook.To ensure that all Health & Safety requirements are adhered to. Comply with all current and future HACCP legislation.
To ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
To ensure that all dishes reach the hot plate or passé correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
To ensure that your section is being kept clean and tidy at all times.
To ensure that junior cooks and trainees receive the right training and optimum guidance.
To ensure that any anticipated shortages are communicated promptly to the sous chef or head chef.
To ensure that no horseplay is allowed in your section and that all staff under your control are treated fairly and with courtesy.
To deputise in the sous chef's absence and take charge of the kitchen when directed to do so.
Liaise with your colleagues – have a good working relationship.
To attend meetings, training courses and seminars as and when required.
Under no circumstances is any food allowed to be given to friends or family members without pre-authorisation from a company Director.
No food can be purchased on our supplier accounts for yourself, staff or any other entity without pre-authorisation from a company Director. No food should ever be given to any entity without pre-authorisation. No food should ever be purchased on our accounts unless it is for the Hi-Way bar or sister companies.
Highlight all Health & Safety, Fire Safety and HACCP issues to the head chef and/or restaurant manager.
Requirements: 2 years’ experience as a Commins Chef.
HACCP knowledge and experience.Able to work as part of a team.
