This is a hands-on role that requires attention to detail, consistency, and a strong understanding of baking science and craft.
Key Responsibilities:Prepare and bake a variety of products including: Traditional Irish soda breads
Artisan and commercial yeasted breadsShortcrust and sweet pastry tarts
Light and airy sponge cakes
Layered and decorated cakes
Laminated doughs for croissants and viennoiserie
Sweet and savoury pastries
Accurately follow and scale recipes, ensuring consistency and quality in every batch.
Manage dough fermentation, proofing, mixing, and baking times according to product type.
Operate and maintain bakery equipment including mixers, proofers, ovens, sheeters, and dough dividers.
Maintain high standards of hygiene and cleanliness, following HACCP protocols and food safety regulations.
Monitor stock levels of ingredients and inform supervisors when replenishment is needed.
Assist in developing new recipes and seasonal offerings in collaboration with the head baker.
Contribute to a positive team environment with a strong work ethic and efficient time management.
Essential skills and experience: Minimum 2 years experience in a commercial bakery or similar food production setting.Strong knowledge of: Traditional and artisan bread making techniques (yeasted and soda)
Cake mixing methods (creaming, whisking, all-in-one)Lamination for croissants and puff pastry
Tart and shortcrust pastry production
Ability to scale and adjust recipes to suit production needs.
Good understanding of fermentation, gluten development, and baking temperatures.
Precision and consistency in portioning, shaping, decorating, and finishing.
Familiarity with bakery hygiene, allergen control, and safe handling of food products.
Ability to work independently and as part of a team under time-sensitive conditions.
