Role Summary
The Senior Chef de Partie is responsible for overseeing specific sections of the kitchen. This role involves preparing, cooking, and presenting dishes to the highest standards. The ideal candidate will have strong culinary skills, excellent attention to detail, and the ability to work efficiently in a fast-paced environment. The role of Senior Chef de Partie responsibilities include:
Key ResponsibilitiesTake charge of the grill or fish section, depending on experience and kitchen rotation.
Prepare, season, and cook a wide range of premium Irish steaks, local seafood, and other protein-based dishes with precision and consistency.
Monitor and control grill temperatures, timings, and cooking techniques to achieve perfect results.
Ensure optimal presentation and plating of each dish in line with Brasserie standards.
Support the Head Chef and Sous Chef during service and ensure smooth coordination between kitchen sections.
Maintain high standards of culinary skill in preparation, cooking, and presentation of all food, in line with kitchen standards.
Key RequirementsMinimum 3 years’ experience in a professional kitchen, with a strong background in grilling meat and fish.
Proven track record working in a fast-paced, high-volume, quality-driven environment.
Deep knowledge of different cuts of meat and fish and seasoning techniques.
A passion for working with the best Irish ingredients and delivering exceptional flavour.
Strong organisational skills and the ability to multitask under pressure.
A positive team player with excellent communication and leadership skills.
