Órale – Authentic Mexican Flavor is seeking a highly experienced Head Chef to lead our culinary operations and ensure the absolute authenticity of our traditional Mexican menu.
Key Responsibilities:- Design and standardize authentic Mexican menus, including technical recipe cards and cost control.
- Oversee daily kitchen production, including traditional nixtamalization processes and regional slow-cooking techniques (Pozole, Cochinita Pibil).
- Implement and lead the HACCP Food Safety Management System and ensure full traceability of specialized imported ingredients.
- Manage kitchen inventory, procurement, and relationships with specialized suppliers.
- Recruit, train, and supervise kitchen staff in authentic Mexican culinary techniques and cultural storytelling.
- Minimum 10 years of professional experience in the hospitality and culinary sector.
- Minimum 10 years of direct professional experience within the Mexican hospitality market is mandatory to ensure native palate calibration and deep knowledge of authentic regional flavors.
- Proven technical mastery of ancestral techniques, including Nixtamalization and artisanal masa production.
- Native or professional fluency in Spanish is essential for technical documentation and recipe standardization.
- Must hold Irish HACCP/Food Safety and Manual Handling certifications.
- Customer Service certification is highly desirable.
